Low Fat Chili Verde

3 pounds chicken thigh, no skin, no bone
1 large yellow onion
3 cloves garlic, minced
1 can chicken broth -- (15 oz)
1 tsp. oregano
1 tsp. cumin
1 tbs. white wine vinegar
2 large leeks -- chopped
1/2 cup fresh cilantro -- chopped
8 ounces green chili peppers
Cut the meat into 1-inch cubes. Brown in heavy sauce pot and add the onion, garlic, oregano, cumin, leeks and cook a few minutes. Add remaining ingredients, bring to a boil, reduce heat and simmer till chicken is done and veggies are all tender.
Per Serving (excluding unknown items): 123 Calories; 5g Fat (36.0% calories from fat); 13g Protein; 7g Carbohydrate; 1g Dietary Fiber; 40mg Cholesterol; 140mg Sodium. Exchanges: 0 Grain(Starch); 1 1/2 Lean Meat; 1 1/2 Vegetable; 0 Fat; 0 Other Carbohydrates.
For this recipe, I add more cumin, it is to suit your taste. I also add at least 1/2 teaspoon of black pepper and if you are adventurous, you can add tomatillos too, just peel the outer part, chop them up and add them in with the veggies, about a cupful. You can also put everything in a crock pot and cook on low for about six hours. I would still recommend browning the chicken first just for better flavor. You will also need to add water to it as it cooks down. Just add it as needed. Lastly, you can subsitute green onions for the leeks if you like. Use an entire bunch.

Liese, this is a good recipe, but you need tomatillos in there too, or it's just not the "real deal" about 4 peeled, diced ones (run 'em through the blender) ought to do the trick.

I don't know if you eat pork but here is a recipe from my store and it goes in the slow cooker :) Gotta love that
2lbs pork cubes
1 cup diced tomatoes (or tomatillos is you have easy access)
1 cup diced onioins
1 TB garlic
2 c canned diced green chiles
.25 c flour
1tsp salt
.5 tsp pepper
.5 cup green pepper
1TB Cumin
1TB Chili powder
1 tsp oregano
throw it all in the crock pot on low for 6hours.
