Portabello mushroom caps
pizza sauce
shredded cheese
toppings (red onion, green pepper, olives etc)

I either broil or use the grill pan to cook the mushrooms. The top with sauce and toppings. Place under the broiler until melty. You can also substitute eggplant slices (rounds) for the mushrooms.
