Full Version: Fireball Meatballs

These are really good - I cheat and use the premade meatballs from Sam's, but here is the original recipe...

3 lbs ground beef
1 onion, minced
1 cup Italian flavored bread crumbs
1 egg
1 tablespoon Franks Red Hot Sauce
2 cups ketchup
1 cup Franks Red Hot Sauce
1 12 oz can of beer (can be non-alcoholic)

In large bowl, combine beef, onion, breadcrumbs, egg and tablespoon of Franks. Shape into 1 inch matballs. Place in baking pan. Bake at 400 for 10 minutes until fully cooked.

In 5 quart sauce pot, combine ketchup, cup of Franks sauce and beer. Heat to boiling. Reduce heat and simmer for 10 minutes until slightly thickened. Stir meatballs into sauce. Simmer for 5 minutes until heated through.

Serve in chafing dish. Makes 100 meatballs.

My husband is dying for me to make these. He is a huge Franks fan!!!!!

Lee, I have added this recipe in your name to the new cookbook. It is so simple and really good! I added a note to use low carb catsup or a marinara sauce as a sub to bring the carbs down.

Instead of the breadcrumbs, you could probably add 1/4 cup cornmeal and 1 tbsp italian seasoning to bring down the carb count. If 1/4 cup cornmeal isn't enough, maybe 1/2 cup?

These sound good. I, too, use the meatballs from Sam's. They work really well with any sauce. I put them in a crockpot of sauce & let them cook until needed.

Funny story: took meatballs to a church dinner a few weeks ago so I knew I'd have something OK to eat. I couldn't, for the life of me find the chili sauce & the only one I could find was a Thai chili sauce, so I went ahead & bought it. I put it in the crock with sugar free grape jelly & the meatballs. Boy was that stuff hot! Cleaned out the sinuses!!! But, those who commented to me really liked it. It was so hot I only could eat a little.

I have heard you can use crushed pork rinds in meatloaf and such to bring the carbs down too! I am dying to try this but due to Hubby's Gout we have to watch our ground beef consumption!!!

Laura, you could always use ground pork, chicken, or turkey.

I have tried substituting with grnd turkey and he hates turkey so if I don't tell him what it is he is ok with it!!!!

Laura, try it with ground pork. You will be amazed at how flavorful it is and he will accept that idea way before ground turkey! He sounds like my hubby!

You could actually combine the ground turkey and the ground pork. You get less fat, and the ground pork will "drown out" the turkey in regards to flavor. Sounds weird, but it's all covered in sauce anyway! cool-smiley-013.gif
