Full Version: Lemony White Bean Dip

I haven't tried this yet, but looks like something that you could bring to a party!

2 cloves garlic
2 15 oz cans white beans, rinsed and drained
1 cup packed fresh parsley leaves
1/4 cup fresh lemon juice
1/4 cup olive oil
1/2 teaspoon salt

Place garlic cloves in a food processor and pulse until finely chopped. Add the beans, parsley, lemon juice and olive oil and process until smooth. Add the salt - adjust to taste. Spoon into serving bowl. Makes 2 cups (8 1/4 cup servings).

Per serving: 190 calories, 8 grams protein, 25 grams cars, 5 grams fiber, 7 grams fat

This sounds like a milder form of hummus. You're right, sounds like a good recipe to take to a party. You could easily change the flavor by using green onion, or roasted red peppers, or different herbs and spices. Very versatile recipe.

Thanks Lee. This sounds like a lighte hummus! I LOVE hummus but have
fried many a blender making it with canned chick peas/ garbonzo beans.
I know my family will love this too!

Sounds yummy...the only problem for me would be WHAT TO EAT IT ON OR WITH! lol.. nature-smiley-008.gif
