I sent this to Celadon, but thought that I'd post it here as well...

1 pound of boneless. skinless chicken breast cut into six pieces
1/2 cup of pearled barley, rinsed
1 onion sliced paper thin
1 Cup of Just 2, French Dressing
1 Cup of apricot preserves, sweetened with Splenda
1 T dried tarragon
2 packets of Trader Joe's low sodium beef broth (it's a liquid packet)
1/2 of a butternut squash, cubed
350 degree oven.
Place the rinsed barley in the bottom of a 10x10 inch baking dish. Place chicken breast pieces on top of the barley.
In a gallon sized Ziploc bag, combine remaining ingredients and smoosh together. Pour contents over the top of the chicken and bake for 1 hour 10 minutes.

With the remaining half of the squash...for fun I tried this and it was yummy!
Spray a small baking dish with Pam.
Cube half a butternut squash and place cubes into a gallon sized Ziploc bag. Add 1 T olive oil, 2 T balsamic vinegar, 1 tsp salt, freshly ground pepper and a tablespoon of dried minced onion. Smoosh together and pour into prepared baking dish. Bake at 350 for an hour. Top with a tablespoon of slivered almonds and spray the top with Pam. Bake for an additional 15 minutes.

Looks REALLY good Kim. What would you substitute for the Trader Joe's beef broth as we don't have them in NJ or even the east coast that I know of. What is the equivalent of regular beef broth?

Kim, here are the numbers. I assumed 6 servings cause that is a lot of food. I also ran it with both your TJ broth and with the Herb-ox packets in case people don't have one or the other and the numbers were the same. This one is certainly a keeper! The carbs might scare some people but when you add 5g of fiber in the mix, the net carbs go way down so don't be afraid to try this dish folks!

Wow!!! Thanks Celadon! I would have guessed it to be a 300 calorie meal. Ya know how you can just sort of "guess" that number? :P
A side note that it is a really sweet meal. If you like the sweet flavor with your protein, you'll really enjoy this. My favorite was the accidental Butternut in Balsamic side dish!

This looks wonderful! Unfortunately, squash isn't in season for us in Ohio & I have two guys at my house that wouldn't touch it if it was. They don't have a clue about what is good!
Thanks for sharing. I may try it when I can get squash, even if I have to eat it for several meals.
