I am working on cooking something on Saturdays that will last the weekend and 4 days of lunches. I don't however want to eat the same thing for dinner. So my question for those of you who live alone is what do you cook / eat for dinner.
For me so far this week it was a scrambled egg and piece of bacon yesterday and a grilled chicken salad for dinner tonight. These are easy single serve things to fix that take about 10 minutes. I am looking for more such ideas.

Ok, here comes Kim's reply, so I'll make this short and sweet. You're doing it.I love an egg for dinner. I love a grilled chicken salad. I also love a "cheeseburger salad" It's like a cheeseburger without a bun. Like having junk food but it's not bad for you. I love a cuppa soup to start and then a grilled bite of meat that is perfect. I love to have some grilled fish with wasabi and soy on it. I love to make a big pan of seared prawns and eat them right out of the skillet with a little horseradish on the side... I like it spicy.

I'm single and live alone. Wow...I feel like I'm at a "Single Girl Support Meeting".
Anyhooooo...I make up stuff and freeze it in single serve portions. Those Ziploc freezer containers are great! I'll do a couple of recipes each weekend and freeze 'em up. I also use the Ziploc steam bags. Honest, I don't work for Ziploc! I buy my chicken/fish in the freezer section and they are individually wrapped (Costco). I'll pop a frozen piece of protein in a bag, toss in some seasonings, a few fresh or frozen veggies...and cook that sucker for about 6 minutes in the microwave. Terrific!
I'm also a fan of canned soups...Progresso is my favorite. The entire can of most varieties is under 300 calories. I don't do these all of the time because the sodium is pretty high. Tasty though!
Canned chicken or tuna with some prepared olive tapenade is yummers on a Wasa or just a bed of fresh spinach.
Okay...I'm hungry...

Sandi you are too funny! I knew Kim would jump on this one too! Just wanted you to know that I am a huge fan of sauteing up some shrimp and eating them right from the pan with horseradish too so you are more of a cook than you know!

When I'm eating alone, I love to keep it simple and just eat out of the pan. I love stir fry with different kinds of meat and veggies. I buy the stuff and chop it up and bag it. Then when I get home, I get my little baby wok screaming hot and let the meat and veggies fry. I'm also crock pot queen. They make little tiny crock pots now...perfect for 5 little dinner servings.
Here's a good one if you eat tortillas...(they have low carb tortillas now...still too high for me) how about a chicken fajita with tapatio picante and a little cheese melted under the broiler. Ole!
Keep it simple, but plan ahead. A hand full of stuff tossed in some evoo and thrown in a hot skillet is all you need. So much faster than take out or eating out. And the house smells so good, and the experience is so satisfying. Put on some Deano, crank it up and swing your hips as you cook. You'll feel like a million bucks.
Hope that these ideas help get you started.

I met my goal of learning 1 new word so far today. Prawns = shrimp never heard that one. Now what the heck is a Deano?
Thanks everyone for the ideas. So far I keep a bag of mixed veggies in the freezer so I can add a little as a side or have a bit of salad instead. I am almost afraid to try some of my favorite veggies though. Last time I ate spinach it nearly put me in the hospital from obstruction. I try to be really careful about veggies and non soluble fibler. I'm going to get some Califlower to sub as mashed potatoes.
Kim, I have cooked more in the last two weeks since I started this than I have cooked in the last 20 years. Really. I don't know about cooking two big things in a weekend to last all week. LOL

I saw a topic a short time ago about cabbage stir fry so I tried it. It's really quick and yummy. I bought some boneless pork cutlets already tenderized. I cut them in half then took some of the halves and cut them up into small bite size pieces and vacuum sealed them in Garlic and herb marrinade. When I want to make the stir fry I do this:
Fry 1 piece bacon then crumble in a bowl
Put the pork and marriade in pan with about a 1/2 cup already shredded (cole slaw mix without seasoning) cabbage.
Add a splash of soy sauce.
Stir fry til nearly done then add bacon back in.
This makes a really yummy one person meal in just a few minutes.

Ok nix the cabbage stir fry. I knew it tasted to good. I just ran the numbers through Living Cookbook and the KC Masterpiece garlic and herb marinade is way to high in sugar. Darnit I really liked that too. Guess I'll have to figure out a way to flavor meat without bottled mariandes.

I'm sorry Sandi and BeJean, I don't mean to make you feel so. Trust me, many of the younger crowd make me feel so and my favorite music is now on the "OLDIES" channel. I am 4? so definitly not a spring chicken. I just coudn't imagine how Fred Flintstone's pet could make anyone swing thier hips in the kitchen.
