Hi there!
I made something tonight that I thought you might want to add/modify. I had not had it since my surgery so I decided to try it.
I do this each time differently depending on what I have on hand. I make "Fried Rice" but instead of using rice, I use shredded cabbage slaw. I just add the slaw last because it cooks so fast. I add the usual stuff, eggs, onion, carrots, shrimp-ham-chicken.
I thought maybe you could try your hand and see what you think...

Hmm that sounds pretty good and quick too. I'll add it to my recipes for a quick dinner.

Aloha,
It's like a simple stir fry. I use Pam or little olive oil.
You can use bean sprouts, watercress, brocolli, onions, any vegie sliced for quick frying.
Egg foo yung...................stir fry the vegies, sliced meat, chicken or even shrmip or just vegies, then pour beaten egg over and fry a little more and done.

Lynn, this is a great sub for the more carb laden fried rice and you still get the texture.
Like Meliss, I do the Egg Fu Yung because eggs are so easy for me to eat now. Makes a very quick and easy dinner for me when I don't want to eat what I cook for everybody else.

Of course...I have to jump in with "NOT ALL CARBS ARE BAD"!!! Tee-hee. How about some cooked barley or wheat berries? I love both of these grains!

@Lynn - do you have a copy of THE NEIGHBORHOOD COOKBOOK. Lucinda put in a recipe for mock fried rice using cauliflower. I think it is in the veggies or side dishes section.
