Okay, even more than soda, I was addicted to french onion soup...the really creamy kind with cheese and croutons. Anyone have a wls healthy recipe for this? Celadonnnnnn to the rescue? Thanks in advance all!

I have a really yummy recipe for it, although i'm not sure how good it is for you. LOL I'll have to dig around a bit and find it. I'll post it later.

French Onion Soup

1 tablespoon butter
1 tablespoon olive oil
2 meduim white onion -- chopped
2 medium red onion -- chopped
2 large shallots -- chopped
2 cloves garlic -- chopped
1 cup white wine
1 quart beef broth
2 cups low sodium chicken broth
1/2 teaspoon tabasco sauce
1 teaspoon worcestershire sauce
1/4 teaspoon nutmeg -- freshly grated
1/2 cup swiss cheese -- finely shredded

Heat butter and olive oil in large heavy pot over medium-low heat. Saute the onions, shallots and garlic until soft and brown, about 30 minutes, stirring frequently.

Add the wine and continue to cook until the mixture is reduced to a thick glaze.

Stir in the beef broth, chicken broth, tabasco, Worchestershire and nutmeg. Reduce heat and simmer for 45 minutes. Season with salt and pepper.

To serve, reheat the soup to boiling, ladle into bowls and sprinkle with some of the cheese.

OTM, thank you! I appreciate you posting that for me...I will have to try it this weekend.

I will try it as my 'reward' for putting together my treadclimber that arrived today!

Sorry I got in here late. It is great to see that OTM was on it though. Her recipe is very similar to mine so I would say go for it!
