<--I love this guy! Sometimes it is how I feel and right now is one of those moments. I've got a Pot of Yum on the stove.
Have you ever just "winged" something...and as it is coming together, you just KNOW that it is going to be good? This is what I'm experiencing right now and it's why I feel like this -->
Ya know, it's still okay to get excited about food after having WLS!!! It's just different. Instead of getting thrilled over the fact that my frozen chicken nuggets cook for the same time and temp as my tater tots (seriously...back in the day, I got giddy over something like that)...I get excited about healthy...good for my body...food!
Pot of Yum
Chopped yellow onion
4 Whole Cloves Garlic
10 oz bag cremini mushrooms
10 oz bag baby carrots
Sautee the above ingredients in a tablespoon of olive oil
(I remove the garlic...don't digest it well! If you like garlic, chop it up and leave it in)
Add one Jennie-O LEAN Turkey Smoked Sausage (14 oz link) chopped in half inch cubes
Two Cups of Bob's Red Mill Dried Vegetable Soup Mix (full of lentils, dried veggies, barley, etc)
5 T good chili powder mix (I used Granny's Spicy)
1 large can of chopped fire roasted tomatoes
4 C low sodium beef broth
2 C water
Simmer for an hour.
I have no idea what the numbers are on this, but it is in my biggest pot...lots of servings. I'll be freezing this up! Once it's done, I'll post back as to how it came out and if I needed to adjust the seasonings at all.

oh Kim, this sounds sooooooooo yummy. Especially when the temps are in the 20s.

Oh man...call it what you want...but I'm still gonna call it a Pot of Yum. I'm sitting here...loving every bite as my nose sniffles from the spice! That Granny makes a wicked blend of Chili Powder! Celadon, feel free to use it in the cookbook. The only thing that I added was a teaspoon of salt. Oh, and the baby carrots were a 12 oz bag. Do you need the Bob's Red Mill info to run the numbers? I'd be happy to provide it!

We'll call 1 cup a serving. However, I ate about a quarter cup more. Feel very satisfied...now I must blow my nose!

I just put it into single serving containers...this recipe makes about 10 cups of Yum.

Mmmmm Kim! This looks absolutely delicious...
What is Bob's Red Mill Veggie soup mix? Can I substitute it and if so, with what? Liptons is about as creative as wally world up here gets! lol

Thanks Kim and thanks for adding how much it makes. That is the biggest problem when people post recipes. I don't like to assume amounts. The picture looks so yummy! So, I will call it Sarge's Pot of Yum!
Oh, thanks too about the Bob's. I don't need the info. I have some. Glad you added the website in. Lots of folks just don't have access to a lot of things unless they order online.

Kim, the numbers for this recipe are amazing! I think you have a real winner here. The main thing is that it looks like it is just full of flavor!

As you can see, there really isn't much change. Calories, carbs, and sodium went up a bit. The calories are basically in the sausage and the soup mix. Everything else is low calorie and low carb veggies.
