Hi Celadon,I took your basic "Baked Oatmeal" recipe and tweeked it to fit what I had in my pantry....here's the original recipe and my substitutions can you run the numbers for me???

Baked Oatmeal

2 cups oats, rolled (raw) -- use the quick variety, not old fashioned
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk, skim......*1 c Whole Milk
1/2 cup egg beaters® 99% egg substitute.....*2 Eggs
1/2 cup applesauce, unsweetened......*1/2 c Smashed Bananas
4 tablespoons brown sugar twin......*4 T Xylitol (natural sugar substitute)
1 teaspoon vanilla extract
1 1/2 teaspoons cinnamon
*1/2 c Craisins
*1/3 c Chopped Pecans
Preheat oven to 325°. Combine dry ingredients and add wet ingredients. Mix it all well. Pour into a square glass baking dish that has been sprayed with non stick spray on sides and bottom. Bake for about 45 minutes. Let cool, cut into servings and store in the refrigerator or freezer.
