Full Version: Pesto Chicken

I made GrandmaRo's Turkey Meatloaf and had a half bottle left of the "tiny wine". Hmm...what could I use it for? I flipped through some books and ended up modifying a recipe to work for me. I bought Celadon's "Tube of Pesto" last week when I cleaned and restocked my pantry, so I used it in this recipe. This came together FAST and was super yummy. It was all that I could do to keep from licking my plate. Okay...I live alone...you KNOW that I licked my plate!

Pesto Chicken
1.25 lbs boneless/skinless sliced chicken breast (fresh)
1 t dried thyme
½ t salt
½ t freshly cracked pepper
¼ C white wine
1 t garlic powder, or fresh chopped
½ C fat free half and half
3 T Pesto in a tube
1 C canned diced tomatoes/drained

Wash and pat dry the chicken slices. Put the seasonings into a zipped plastic bag and then add the chicken. Squish around until the seasonings are evenly distributed.

Spray a large skillet with non-stick cooking spray and heat on medium. Add the chicken and cook for five minutes, turning them once midway. Remove the cooked chicken to a plate.

Add the wine to the skillet and cook for a minute, stirring up the brown bits off the bottom of the pan. Add the half and half and bring to a simmer, stirring. Cook until this reduces down a bit…a few minutes. Add the chopped tomato and the pesto. Stir to blend and then add the chicken and any juices back to the skillet. Heat for a few minutes and serve!

Now Kim, that really looks yummy! The saucier the better for me when it comes to chicken. I'll have to try it, and soon!

That looks and sounds delicious! I've got the chicken and will get the pesto tomorrow!

Hope you liked the turkey meatloaf too!!

Kim, I copied this into MC to put in the Holiday Cookbook. The picture even copied over for me! I was so happy cause I didn't think it would!

You have got to remember to approximate the number of servings PRETTY PLEASE????? It makes it so much easier for me when you do.

Darn it Celadon! I usually get that info in there. I consider a slice of chicken breast as one serving, so there were 5 in the pack. Serves 5.

FYI...it reheated well for lunch today!
