Made it last night...WITH the pears...very good!

But honestly...is it me or does it just take TOO LONG to prepare? I swear it took me an hour (or what felt like an hour) lol.. to cut up that bugger!! It was good and worth it since I was just hanging at home....but dont know that i'd do it on a week night when time is not my friend!

However, now I have VEGGIE casserole to last me all week!

THANKS!!! I wish I spent more time.....with these fun recipes....I might try to make that happen more!!

I've cooked that darned butternut squash so many times this season, I'm faster than lightening when it comes to prepping it!

However, this one does take a bit of time. It's a weekend recipe for sure and I don't know about you, but if I'm in the mood...I love to spend the time prepping and cooking. Eating it seems so trivial when I'm done, but during the week...those leftovers are a blessing!

Thats exactly IT Kim!! I LOVE it when I can have my veggies for the week! YAHOO!!!

I know you have made it a zillion times....my weekends are usually busy as most...but I too do enjoy prepping a good meal and enjoying it.

The best part is....my honey LOVES prepping veggies...but he wasnt here this weekend...but I had the time and didnt mind.

I LOVE butternut squash!! I did find it already cubed and done at trader joes...I even have some in the freezer. Dont know why I didnt use that...but I think because FRESH always seems best! lol..

Well, for this dish, it's better to have it sliced instead of cubed...the layers, ya know? Save the cubed stuff for another dish. One that I really enjoy is tossing the cubes in a Ziplock...add some EVOO, Balsamic Vinegar and minced onion. Bake it on a sheet pan at 375 for about 45 minutes. Fast and tasty!

The fastest and easiest way to peel a butternut is to use a really, really sharp potato peeler, you know the ones that look like a cheese slicer? They rip through that puppy in no time. If you make sure you have a really sharp knife to then slice it with, it is as easy as the pear!
