Full Version: Pumpkin Sausage Soup And Meatloaf

As you know by know I am just learning to cook. Some of the things I have tried came out great..... BUT I had two big flops this weekend that I am stuck eating until I can try something else next weekend. Here's the story.

Pumpkin Sausage soup.
I already had a lb of Eckrich sausage so I decided to use it instead of the breakfast sausage. I didn't pay attention to the 5 cups of chicken broth and only bought a 14oz can so used water for the rest. The kicker was when I decided to look at the package on the sausage I discovered there were no where near as many protein grams as I would have thought. Instant panic....gotta get more protein in that soup. Grabbed the unjury and tossed in a scoop. On second thought better make that two scoops thats a lot of soup. Of course you are NOT supposed to add the stuff to hot liquids. It curdled and make the icky looking white lumps in the soup. Truth be told the soup doesn't taste to bad. It was actually better today after absobing the flavor from the sausage. Next time I'll try it with the real sausage and more chicken broth.

Judy's really ICKY meatloaf
I had a lb of burger and my brand spanking new meatloaf pan complete with grease draining inner liner. I took the meatloaf muffin recipe and started putting things together. Well I don't have a cracker in the house nor bread so I used a couple table spoons of soy flour instead. I put all the seasonings in and it clicked in my twisted brain that someone mentioned mealoaf as being bland. Hmmm I LOVE sage. Lets just toss a couple tablespoons of that in there to top it off. Insert into oven and diligently test center with meat thermometer looking for that lovely 160 degs. I'm getting really hungry anticpating this since the soup was bit of a flop. Finally after almost 2 hours I had 160 deg center. Oh boy oh boy this is gonna be soooo good!!! WRONG!!! This stuf is a SAGE NIGHTMARE!!!! Did I mention I love sage? Well NOT THIS MUCH! So now with a whole pan of this mess I am trying something different with it every night to tone it down. Tonight was the best so far. I bought some low carb sort of macaroni but bigger noodles. I cooked a handful of them up. Nuked the Iky meatloaf and put some alfredo sauce on it. Well low and behold that actually tasted pretty darn good and I'm still well within my carb limit.

Next weekend I'll have to see what new recipe I can totally butcher!! I am GOING to learn to cook even if I give myself food nightmares in the process!!

If you're old enough to remember George Burns & Gracie Allen,
you might recall her recipe for roast beef...
here it is:


Gracie Allen's Classic Recipe for Roast Beef

1 large Roast of beef
1 small Roast of beef

Take the two roasts and put them in the oven.
When the little one burns, the big one is done.

jas, lesson learned. Here is the best tip I can give you. Don't give up! You have the makings of a great cook! You just need to learn that in cooking, you can add but you can't take it out. So, dealing with herbs and spices, use a teaspoon at a time and then TASTE. Most people would just throw it out. You on the other hand were determined to save it so you found ways to lessen the impact. That is why I say you have the makings of a great cook. Did you know that some of the best recipes ever created were MISTAKES???

Well, Judy! I give you an A for creativity!!! Keep trying and you will get the hang of things.

ok..I had to laugh too...cuz I couldl TOTALLY see myself switching things up because I didnt have something. But then I saw you say COUPLE TABLESPOONS OF SAGE and I thought NOOOOOOOOOOOOOOOOOOOO!!!! lol...

Thanks for the chuckle Judy!! But sounds like you are making due. I would have TOSSED it and called for TAKE OUT! lol.. j/k.

Try this...chop up a piece of the dreaded loaf and place in a microwave safe bowl...add a scrambled egg (NO SEASONING) and nuke it til it quits wiggling...about 2 minutes.

MF while I barely remember George Burns I don't remember Gracie her method for roast was really funny. I might have to try it if I were to put a roast in the oven. However for me all roast goes in the crock pot. I figure after about 16 hours on high it has GOT TO BE DONE.

As for throwing the food out, yea it was tempting but.... then I wouldn't have ready to eat or nearly so food for the work week. The P&S soup I eat with a low carb tortilla which makes it filling. It really doesn't taste bad I just have to close my eyes when I eat it because of the protein powder lumps. The meatloaf on the other hand is now 1/2 gone but definitly has to be eaten with something else. Sunday night I boiled up a couple of califlower pieces, mashed them with butter and cheese and ate with meatloaf. As long as both went into the mouth at the same time it was ok. Sunday for lunch I crumbled it up into some lettuce with ranch dressing. That was also eatable but last nights pasta noodles a alfredo sauce was really good. Who knows what I'll try tonight. I would try it with cabage as a stir fry but my shredded cabbage is quickly becomming mush.

Kim the thought of wiggling eggs at 3:30 am is just to much for my tummy!
