I bought a fish 'combo' deal, with different types of fish steaks in it...Mahi Mahi, Swordfish, Halibut <MMMMM!!>, and Salmon. I have found tried and true recipes for the first three...but don't like the taste of salmon. Does anyone have a recipe that basically masks the flavor, without adding too many unwanted numbers to it?

I did a search...but none of them seemed appealing to me that I found. Maybe hearing from someone that has tried one and enjoyed it would help.

I like salmon baked, wrapped in foil, with salt & pepper & lemon juice. I think salmon is a "fishy" fish & maybe an acquired taste. I grew up with it. My Mom fed us salmon soup (not WLS friendly) when I was a kid as she & Dad tried to keep six kids fed & clothed. She substituted Mackeral (sp) part of the time because it was cheaper. She could really make that canned fish go a long way!!!

action-smiley-065.gif Hey chickster! So I have a question...what kind of "flavors"do you like? I have had it with a lemon/pepper seasoning...or this really yummers "parmesan crusted"...or in a bit of Creole cream sauce...what's your palate??? I have often thought it would be yummy to soak it in Italian dressing for a couple of hours then bake it or saute' it with some veggies after the marinade...should take care of the "fishy" taste...I love salmon, but dh doesn't care for it fresh just in patties and fried!(no the most figure friendly version....) LOL! smile.gif

hmmm... salmon steaks.... are they U-shaped? with the bone in the middle?

Let me look at my Alaska cookbooks. I have one that is just all salmon recipes.

Salmon Patties

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 15 1/2-ounce can Alaska salmon
3/4 cup dry bread crumbs
1/2 cup thinly sliced green onions
1/4 cup chopped parsley
1 teaspoon dill weed
3 egg whites
2 tablespoons lemon juice
1 tablespoon vegetable oil
Hamburger buns -- optional
Lettuce leaves -- optional
Tomato slices -- optional

Drain and flake salmon, reserving 1/3 cup liquid. Mix together flaked salmon, bread crumbs, green onions, parsley and dill. Mix in egg whites, lemon juice and reserved salmon liquid. Form mixture into 4 patties.

Heat oil in non-stick frying pan. Sauté patties over medium heat until golden brown on both sides. Place salmon patties on hamburger buns; garnish with lettuce leaves and tomato slices, if desired.

Lemon Cream Baked Salmon

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 salmon steaks -- about 2 pounds total
1 cup heavy cream
5 teaspoons lemon juice
1 Tablespoon minced onion
1 dash salt
Chopped fresh parsley

Arrange salmon steaks in a buttered baking dish.

Mix cream, lemon juice, onion, and salt and pour over steaks, bake uncovered 25 minutes at 400 degrees (or until fish flakes easily).

Spoon sauce over each serving. Garnish with fresh parsley.

This recipe yields 3 to 4 servings.

Honey Mustard Glazed Alaska Salmon Steaks

2 6-ounce Alaska salmon steaks (6 to 8 ounces)
1 tablespoon Dijon mustard
2 teaspoons honey
1 pinch thyme

Place salmon steaks in microwave safe dish.

In a separate bowl, mix together remaining ingredients. Drizzle mustard glaze evenly over salmon steaks. Microwave on HIGH for 3 to 4 minutes. Remove from oven and allow to stand for 2 minutes before serving.

Firecracker Grilled Alaska Salmon

Amount Measure Ingredient -- Preparation Method

4 salmon steaks -- or fillets (4 to 6 oz ea), thawed if necessary
1/4 cup peanut oil
2 tablespoons soy sauce
2 tablespoons balsamic vinegar
2 tablespoons chopped green onions
1 1/2 teaspoons brown sugar
1 garlic clove -- minced
3/4 teaspoon ginger -- grated
1/2 teaspoon red chili flakes -- or more to taste
1/2 teaspoon sesame oil
1/8 teaspoon salt

Place salmon steaks or fillets in a glass dish. Whisk together remaining ingredients and pour over salmon. Cover with plastic wrap and marinate in refrigerator 4 to 6 hours.

Remove salmon from marinade and place on a well-oiled grill 5 inches from coals. Grill for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes when tested with a fork. Turn halfway through cooking.

This recipe yields 4 servings.

Hey otHm...I knew you would have a recipe... I have a question about salmon, when my mom and I visited Alaska in the 90's we took a day cruise out to the Prince William Sound and while out there we stopped off on an island and ate fresh salmon in some sort of mayonaisey sauce (they told us it was a local way of prep), do you know what this recipe might have been??? Or something close...they also had halibut prepared in a special way but I remember that I liked the salmon the best, it didn't taste as "fishy" to me...thanks HOT DIVA with all the good recipes...lol!
