My son is having his 4th birthday party and I'm just now thinking about what appetizers to prepare (o.k., so I'm a procrastinator at times! *blush*

So far, I'm thinking:

veggies w/ranch dip (made w/nonfat yogurt...shhhh)
Layered bean dip (found recipe here)
Rumaki (dates stuffed with olives and wrapped in bacon) - unless I get better ideas
Chips for the kids
Pita Chips & toasted pumpernickel for the adults


What are your favorite quick/EASY appetizers?

My favorite appetizers...hmmm, have several...
  • cheese ball with (homemade w/ cream cheese, cheddar cheese, onions peppers, crushed pineapple, various herbs/spices & rolled in nuts or bacon bits)
  • Stuffed Mushrooms (1 lb HOT sausage, 8 oz cream cheese, 8 oz mozzarella, fresh garlic)
  • What I like to call "Shrek" wraps...Spinach wraps(don't tell the kids) with your favorite wrap fixins' a lil' cream cheese/mayo smeared on the wrap and then roll it and cut it into "bite size" pcs.
  • kids love a pb & jelly version of the "wrap"
  • Rotel/ cream cheese dip....(ok, ok so I'm a lil partial to cream cheese; it's yummers what can I say?)
  • Spinach Dip (Knor's recipe on pkg)& Hawaiian bread
  • Shrimp or crab dip/platter (SUPER DUPER EASY....just a couple pkgs of cream cheese {cracking myself up now! lol} softened with a lil bit of Worcestershire sauce and seasoned to taste; spread it on a platter then pour cocktail sauce on top of that; sprinkle with crab{can be imitation} or shrimp or combo of both, chop up a couple of GREEN ONIONS and serve with crackers or veggies or whatever; ALWAYS A HIT! )

I always make a peanut butter dip and apple wedges. The kids and grown ups like it equally well.

Peanut butter dip:

1/2 cup peanut butter
1/2 cup vanilla yogurt (I always use the low carb kind that is sweetened with Splenda)
1 cup sugar-free cool whip

Mix the peanut butter and yogurt together, and then fold in the cool whip. Chill and serve.
Some folks add a little cinnamon, but I like it better without. You can also adjust the amount of peanut butter, which I often add more, if you want.

This is good with about any kind of fruit, or graham crackers or pretzels, etc. I made this for my son's preschool class, and they practically licked the bowl clean.
