I haven't run the numbers on this yet, but I just came up with a humdinger of a tasty dish, so I want to share it with you...Now you may laugh at my excitement over this, well, go ahead. It was a good one to me...
I don't know what to call it yet, but it's kind of a quiche.
Preheat the oven to 400 degrees
Saute:
1/3 C. yellow onion
4 cubic inches of beef bratwurst
1 t. extra virgin olive oil
When this gets hot, add
1 C. frozen edamame shelled
Stir this until everything is hot and the onions begin to carmelize. Then, mix in:
1/3 C. crushed pork rinds (original brand)
Mix in your blender and pour this in the skillet on top of the other stuff:
2 eggs
1 t. mayo
1 t. sour cream or yogurt
Top with:
1/2 C grated jack cheese
Let the eggs set up on the stove top for a few minutes, then pop it in the oven to finish up the eggs and let the cheese melt
Serve with a couple of dashes of tapatio.
Makes 5-6 servings (about 1/2 C. serving)
I've run the numbers through fitday and here's what I get...
1/2 C. serving = 137 Calories, 10 grams fat, 3 grams carbs, 9 grams protein
Pretty tasty, very rich! Enjoy.

Hi Sandi! Nice to see that you are venturing into other things in the kitchen! Maybe you won't be eating the same way anymore. I'm glad your recipe turned out tasty!

Hey, I just realized that I didn't add the cheese in to the calculations!!!! argh... let me fix that!

Nancy, look in the frozen food section of your grocery store. They should have it with the veggies or with specialty foods.

Yeah, Safeway, Ray's, Shop Smart and Freddy's all have 'em. I got this bag at Safeway. I love the ones in the shells for parties too. You have to show everyone what to do with 'em and then they love them too.
By the way, my "meat lovin' mate" loved this too, even though there was only a whiff of the brat in it. He said it was, "real tasty!" Quite an accolade from my mountain man. He doesn't like pork rinds either. I don't really, but I thought this needed a crunch. I will leave them out next time I think. I might put more egg.

You guys! I really really apologize!!! I kept looking at the numbers and I was thinking, something just isn't right about this. So I ran 'em again and I got the new figures I posted. Well, when I was asleep last night the answer came to me. I didn't put the right amount of edamame and bratwurst in when I calculated the whole recipe.
That's why the numbers looked so low. I'm really sorry. I went in and fixed it. I'm really embarrassed, honest I'm not that dumb. I was just really excited last night about the fact that it came out good! So here's how I got the real numbers, and I believe that this total is very accurate.
Here's how I did it. I took all of the ingredients and entered them for the whole recipe on fitday. Then I took the totals and divided the number by the number of servings. I had 5 half-cup servings. So here's what I got:
Cals=287 Fat=22 Carbs=6 and Protein=18 for a half cup (4oz) serving.
THIS is why I don't post recipes or contribute anything! ARGH!!!

I printed the recipe now I will be going to try to buy everything so that I can try this today.....Hope I can find everything....I will post later to say how it went....hugs
