On the weekends I try to cook something fairly big to take for luch at work. Usually some sort of meat done in the crock pot or the oven. Then to keep it interesting I eat it different ways such as over lettuce with ranch and cheese one day, and with different vegetables for the other 3 days.

What do you take to work for lunch?

I usually like to cook up a batch of chicken or fish, normally sauteed in olive oil and lightly seasoned with salt and pepper. It's easy to heat up, and can be "adjusted" later however I like.

YEP! me too..just leftovers of protein, veggies etc...fruit/yogurt for snack etc...

WORKS FOR ME!!

I cant reheat fish..so thats a no-no.

I like casserole type things or taco soup etc...

Actually this week it has been the pumpkin sausage soup and the split pea soup from the 5dpt.

I usually go home, it's only a 3 minute trip. When I eat at the office, I may have cottage cheese w/ fruit or a breadless deli sandwich w/ pickle. I don't re-heat in the microwave very often because I found that Lucille didn't take kindly to it.

I like this recipe:


1-2 lb beef roast or Pork

1 jar of fresh salsa (I use Rojo's)

1 med onion chopped

1/2 cup water

Crockpot on low for 8 hours- shred beef or pork and enjoy..=)
