Is rice really that bad for us?

One of my favorite recipes is Red Curry Chicken with steamed rice...this is probably a really bad thing for me huh? It's because I love it..I know it!

Rice is basically empty calories. Because our pouch is SO small, we need to get the most nutrition we can in the smallest meals. If you're trying to lose weight - then, yes, consider it a no-no. However, I don't believe anything is a no-no long term. Once you're MAINTAINING and not trying to lose weight, a VERY SMALL amount should be o.k. (i.e., 1-2 TBSP of rice eaten with a normal portion of protein). Any refined carbs though (white rice, white potato, etc.) should be eaten very sparingly - lest the carb monster ATTACK! sign0053.gif For me, personally, it's something I'm going to have to be mindful of for the rest of my life because I KNOW NOW that refined carbs send me into a very slippery slope.

You might be surprised by just eating the red curry chicken, you may not even miss the rice. Often, stuff like that is just a habit.

Sure..here it is:



INGREDIENTS
  • 1/4 cup red curry paste
  • 2 (13.5 ounce) cans coconut milk (I substituted lowfat coconut milk)
  • 2 skinless, boneless chicken breast halves - cut into thin strips
  • 3 tablespoons fish sauce
  • 1/4 cup white sugar (I used Splenda)
  • 1 1/2 cups sliced bamboo shoots, drained
  • 1/2 red bell pepper, julienned
  • 1/2 green bell pepper, julienned
  • 1/2 small onion, chopped
  • 1 cup pineapple chunks, drained
  1. In a bowl, whisk together curry paste and 1 can coconut milk. Transfer to a wok, and mix in remaining coconut milk, chicken, fish sauce, sugar, and bamboo shoots. Bring to a boil, and cook 15 minutes, until chicken juices run clear.
  2. Mix the red bell pepper, green bell pepper, and onion into the wok. Continue cooking 10 minutes, until chicken juices run clear and peppers are tender. Remove from heat, and stir in pineapple. Serve over the cooked rice.

Rice is a processed carb. Processed carbs are NOT WORTHWHILE CARBS. I love curry chicken and you can truly enjoy without the rice. There really isn't much nutritional value in the rice. Eat the curry chicken over veggies... you might just like it more!

I must agree with Marla...I LOVE curry chicken. We have it once a week, and I eat it over steamed zucchini and squash! I don't miss the rice at all.

Or, try it with Tofu shiritaki noodles! Yummy!

The biggest problem that I have with rice is that it is one of those carbs, like bread that EXPANDS in the pouch. Because it absorbs fluid. You really don't want to be expanding your pouch at this stage of the game do you? Once you get past the point where your pouch will expand, then if you must have it, as everyone else said, eat it SPARINGLY.

Just adding my 2 cents, I eat rice all the time. Just remember, moderation is the key! I happen to love rice, but I did not eat it the first 2 years. Protein first....

I love Curry Chicken...and the rice was always a bonus...soo good..but I can live without it.

the curry chicken recipe looks good, i'll have to try it, but no rice for me....for some reason it doesn't sit well in my pouch,
