Hi Hope you enjoy this recipe for a banana loaf very good
No Added Sugar Banana Loaf Cake
4 VERY ripe bananas mashed up well
4oz self raising wholemeal flour
half teaspoon baking powder
2 large eggs
3oz butter softened
4 teaspoons of brown sugar style sweetener
few drops almond essence/extract
optional - handful of raisins or sultanas (could also add a handful of chopped walnuts or pecans, I also make an adults-only version of this where the sultanas have been soaked in Jack Daniels for several hours til nice and plump)
combine the whole lot together and pop into a loaf tin, bake at about gas mark 5 for 40 minutes or until a knife stuck in middle comes out clean- delicious served warm, sliced, with a little bit of butter
I made some today without the raisins etc and added a few teaspoons of Benefibre to the mix just to up the fibre content a wee bit - was able to eat a piece mashed up well into some NAS custard with no ill effects.

Thanks for the recipe Mark. My hubby loves bananas so we have them all the time but since they have way too much sugar for me, I can't eat them anymore. I have the problem of bananas going bad too often. I usually just make a pan of muffins for him out of them but this recipe would be healthier for him and I love the idea of the almond extract. I have some lovely golden raisins and a ton of walnuts in the freezer so I will take the four almost bad bananas on the counter and surprise him with this when he gets home from work. If I get the time, I will take a picture and post it here to your thread.

Hello Mark from the UK! And thanks for the recipe. In another thread, I've been turning
the Neighborhood folks on to Royal Worcester Egg Coddlers from your side of the
pond. Everyone is "chuffed to little mint balls" with them! (as well they should be).
Incredible these wonderful little egg cookers are virtually absent from the kitchen here in

Oh my god, Mark! This sounds incredibly yummy and very sinful! Do you have any kind of a nutrition count...Reminds me of my holiday cookie recipe! Soak in Jack Daniels and serve! Now adays, a banana is about the most giddy indulgence I allow myself, so I'm salivating just reading this recipe. Thank you for a moment of pleasure.

Sounds delish! I will be making this as soon as my bananas turn good and brown! I love banana bread and will definately add a bunch of walnuts to up the protein. Thanks for sharing.

I promised to try to get this made and take pictures. Well, I did and here they are. This is an absolutely delicious treat. I have to admit that because it is predominately bananas, I could only eat half a slice but let me just tell you it is marvelous and satisfying! I used my favorite loaf pan which is 3" x 12". Not the norm, but you can see in the picture how pretty it makes the loaf!
There were really only two changes that I made. I omitted the raisins because hubby doesn't like them in quick breads (if I were making it just for me, it would have been loaded with golden raisins!) and the batter seemed too dry for the time it would need to cook so I added 1 cup of reduced fat sour cream.
For us on this side of the pond, I baked it at 350° for 55 minutes. If you have a standard sized pan, it might take 5 to 10 minutes longer.

Holy Smokes!!! This looks insane...could it really be just over a 100 calories...do those Brits have a different system??? ;-)
I think I'd have to have this as part of a meal, as it would certainly make me want MORE if I didn't eat a big slab of protein with it. Maybe for breakfast...a coddled egg and a piece of this toasted?!?

I think Mark's recipe comes out more like a cake and mine more of a quick bread. Tastes just like a great banana bread to me. Not a lot of fat in it and only a cup of flour so the calories aren't bad. I just can't eat much cause my pouch doesn't like the high sugar content in the bananas.
As far as the protein, I guess we just have to accept that sometimes we won't eat protein in every food we choose. The idea of it with an egg in the morning is good.

Ooohh! Sounds delicious. Since both DH and I like our bananas fairly green, when they ripen up, the dogs get to finish them off. Now I have something else to do with them. Won't make the dogs happy, though.
