If there is anyone else out there that would like to submit a recipe or recipes to the Holiday Cookbook, it needs to get done now! Tomorrow is the deadline for submitting recipes. If you don't know how to do this just PM me and I will send you the information. If you don't have time, PM me your recipes and I will submit them for you in your name.

This cookbook is going to be the best and most complete cookbook for WLS patients. Let's make it a part of all of us here at LAWLS!

I have one for the lazy cooks out there, (my motto is 3 ingredients or less)

These little bite size snacks come out so moist and yummy it is unbelievable how simple they are.
Its a great way to sneak a healthy snack in our your family and friends.

Pumpkin Spice Muffins

Ingredients18 ounces boxed spice cake mix 15 ounces pumpkin (not pumpkin pie mix)

I add chopped nuts to mine.
You can also make this with chocolate fudge cake mix and choc chips.



Directions
  1. Simply mix the pumpkin and the spice cake mix together until well combined.
  2. Spoon into paper lined small muffin/cupcake tins.
  3. Bake at 350* 18-22 minutes or until a knife comes out clean

This is a recipe I used in my WW days. Next time you make them, try this, fold in 3 egg whites beaten to stiff peaks. You will be amazed at how the egg whites increase the volume and make the muffins less dense. A really great snack for kids who need to watch the calories!

Without getting too technical, there are copywrite issues when publishing recipes. If I know that a recipe isn't your original, I can't submit it. This recipe was actually one that came from a TV show so I can't add it.

The deadline is just the beginning for me Jeannie. Now I will have to edit and proof the recipes and all the other mundane things that go into getting it published. Look for your recipes when you order your copy. Most of them made the cut!
