I hear ya! Who can explain what our bodies are up to sometimes? All I can say NANA is that you're on the right track and as long as we're doing what we know is right our bodies will react accordingly "evertually".
I have a classic case of being confused the other week when I broke my arm. I couldn't do my usual 3 mornings at Curves, 2 x 15km bike rides and 1km swim that I do each week of course and for the first two weeks I did no exercise but I still lost 6.5 pound!! How?! Crazy! Now that I've been back at the gym (not Curves) for 2 weeks I've hardly lost a thing. Talk about frustrating. I just keep on doing what I'm doing and wait for my body to do it's "thang".
I'm sure there are a lot of explanations that people can offer as I've read a lot of words of wisdom on this type of subject before but I guess in a lot of ways it will still remain a mystery.
Just keep on keeping on and we'll get there
