This a Marla-fied recipe that I got from a friend. Mine allows for more variety.
The required ingredients are the following...
32 oz of broth (beef, chicken, vegatable, or water) - I use organic, you don't have to.
1 can chickpeas (garbanzo beans) - I use organic, you don't have to.
1/2 white onion
1 can light coconut milk
1 - 2 lbs ground protein (bison, beef, turkey, chicken, venison, etc.)
You can add veggies, spices... whatever you want. Cook in a crockpot or a stockpot on the stove! It freezes really well too.
I have a batch in the crockpot right now... so that I will be set for the week. The following is what I have cooking right now.
1 lb. - Ground Bison
1 lb. - Ground Beef
1 can Organic Chickpeas (Garbanzo Beans)
1 can Organic Black Beans
1 can Light Coconut Milk
32 oz. Organic Free Range Chicken Broth
2 small sweet potatoes - chopped, large chunks
1/2 white onion - chopped, large chunks
small handful fresh rosemary
dash salt
fresh ground black pepper - to taste
LOTS OF CURRY POWDER!!!!!!

Well I just love anything that can get put together in one pot.
ANd chickpeas and sweet potatoes w/ curry HAS to be yummy!
Wow... I need to be more creative.

Thanks, Mick. It is super easy to make. Doesn't cost much, and tastes wicked yummy. I will post a picture when it is done!

I love cooking in the crock pot. You can throw together all kinds of yummy stuff and you don't have to have a recipe.
I really enjoy the Crock Pot Brunswick Stew recipe that is in the library recipes. It goes a long, long, long way. I freeze at least half of it when I make it.
This one looks really good, Marla. I will have to try it. Lucille is really touchy lately about dense proteins. I think she will like the ground meats and the beans. We haven't tried sweet potatoes, but I'm guessing she will like that, too.

And, you had better take a picture of it to send to me or I will send my minions after you! Another pot of yum is a great idea. Maybe we should have a recipe thread where everyone submits their own POT OF YUM! We now have two, yours and Kim's.

Kim's Pot of Yum is different from Marla's Pot of Yum...and I'm sure that there are a dozen other pots full of yum out there! We should have a Pot of Yum contest!

I have one too, but didn't do the recipe nutritional info, so hesitate to post it. I know it's carb and fat safe, just don't have the totals yet. This sounds really good Marla. Rich, but good. And really exotic.

Here's mine:
2 pounds of extra lean ground beef (browned in big meatball sized chunks and throughly drained)
2 carrots peeled and chopped into long bites
1 pound of Italian green beans (or a can if you like canned green beans, but they gotta be the big fat Italian ones, please!)
1 big yam peeled and cut into 2" cubes
1 large can of Diced stewed tomatoes partially drained
2 smashed peeled cloves of garlic (if you don't like it, leave it out)
Mix together in a dutch oven and bake at 350 degrees covered for an hour or until the yams are nice and tender. This makes enough for you and your honey for a week of dinners, or a week of lunches.

On mine, the green beans and stewed tomatoes got changed a little. Only use a 14 oz. can of tomatoes and leave most of the juice in. And for the green beans, you can also use a can of the Italian green beans too, you don't have to use fresh if they aren't in season. If you use canned, use the regular 12 oz. size.

Sorry about the changes Sandi. Sometimes it loses something in the translation. I tend to 'assume' amounts if the exact amount isn't mentioned. With the changes to the correct amounts, you can change the totals to 186 total calories and 9 grams of carbs.
