I found myself at Trader Joe's today. I felt like cooking. I bought some things for my Pot O'Yum. To my surprise I found already cooked Pork Carnitas. Fun... What on earth would I do with it?
EGG FOO YOUNG
I created my version of Egg Foo Young... it was like an asian fritatta.
First. I spritzed some evoo on a pan. Then I sauteed peppers (1 lg. red & 1 lg. green pepper) and onions (1/2 white onion). I added the pork to the pan for the last few minutes. Poured that into a tupperware container & I put that in the fridge. I have enough of that mixture to last me the week.
Individual Egg Foo Young Fritatta
Ingredients:
EVOO - just a spritz
1 lg egg - scrambled
2 TBSP - pepper, onion, pork mixture - see above
dash salt
ground pepper to taste
In a small bowl, combine egg and pepper, onion, pork mixture. Stir to scramble egg. Spritz evoo in a pan add egg mixture and cook on high heat. Add salt & pepper. Once egg sets, flip over. Cook evenly till desired doneness of egg.
