I love spinach but quit eating it years ago because it seemed to formed blockages for me. I wanted to try it again and after seeing Alton Brown make one on food network I decided to try it in a quiche. It looked so easy even I could do it. I used a frozen pie crust with mine at 10 gms carbs for a 1/8 slice of quiche. Sadly it was so good I ate two pieces.
2 Tbs ricotta cheese
2 slices ham diced
4 strips bacon crumbled
4 large eggs
1 cup heavy cream
1/2 cup water
1/4 tsp dried thyme
1/8 tsp freshly-ground black pepper
1 small single serve can of spinach
1/2 cup shredded white Cheddar cheese
1Preheat oven to 375 degrees.2In medium skillet, cook bacon over medium heat until crisp (approximately 8 to 10 minutes). Transfer to paper towel to drain.3In a small bowl, whisk together the eggs, cream, water, thyme and pepper.
In food processor puree well drained spinach with Ricotta Cheese (I used a kitchen towel to get all the water out.)
Into a greased pie dish layer bacon and ham. Pour in just enough egg mix to cover the ingredients. Ad spinach mixture and chedar cheese. Pour in the rest of egg mix until about 1/4 inch from the rim. Top with a touch more cheese4Bake until golden and custard is set, (about 30 minutes). Allow to cool 10 minutes before slicing. Enjoy!5This recipe yields 6 servings
