Ok so I have tilapia fillets, spinach, and some kind of starch for the boys, prolly orzo pasta.
I am wondering what to do with them, something different then my usual (parmesan crusted or tomatoes, garlic & onions)
I was thinking lemon, butter/olive oil, white wine???? I don't like thyme or tarragon but need help with what herb might work best, basil maybe? I need a recipe or light bulb idea. I was thinking of steaming, poaching, or some other kind of really light cookin method.
Any ideas?
Wondering around aimlessly in the kitchen in my mind :P

Well I make a lime Tilapia
Panko bread crumbs...with the zest of 1 lime...a dash of red pepper flakes
Dip the fish in a egg bath and then dredge the fish in the panko seasoning mix...and fry in 1 TBS Olive oil and 1 Tsp of Lime juice..mmmm yummy goodness

Do you have any ricotta or feta cheese? You could make like an Italian version with some basil/oregano...chop and blanch the spinach...drain it real good and then mix it in with the ricotta and seasonings...maybe crack an egg and mix it in...to make a filling for the tilapia...sort of roll the fish around the mixture...sprinkle it with some bread crumbs and bake it off...then top it with some red sauce. You could add the pasta to the boys dish and use some more red sauce on top of that.
With feta/spinach...add some minced onion and top it on the fish...bake it and top it with some chopped olive...sort of a greek thing.
Just some random thoughts. Have not tried it, but it sounds sort of yummy!

Ang...the one tried and true recipe that I use Celadon gave to me...and that was simply putting olive oil in the pan...adding the tilapia and a few squirts of lemon, pepper, and a little garlic...and 6 minutes later, a masterpiece! <I did make it with spinach once...added spinach and feta cheese together, baked it in the oven on top of the tilapia sorta like the chicken dish she gave the recipe for...it was FABULOUS!>
Hope you get some inspiration somewhere...or our dear Celadon pops on with a recipe that speaks to your tummy!

You two have me drooling for feta. I can't have soft cheeses with the parasite. Well if I can find one that I know is pasteurized I think it is OK. mmm, feta and spinach. I think I may have to go to the grocery store and look for some very pasteurized feta....

Hey Ang...most of the cow's milk feta is pasteurized. Run to the store and buy some! Add some chopped up pine nuts for a nice kick!

All this talk about spinach and feta...so I decided that is what I am making tonight! Chicken, spinach and feta...with some fresh spinach and mushrooms reduced in a white wine sauce with white onions, yellow and red peppers for color, and some slivered almonds tossed on for crunch!

Oh my...let's all cook with feta and spinach tonight! I've been on this total "eggs for dinner" kick. I was thinking that I could do something like a spinach/feta/onion/mushroom omelette.

I don't think the rednecks in my little town would carry feta cheese in the market. I've never seen it anyway. LOL
It's lazy night...good for no nutrition Hamburger Helper & a green veggie for the guys and cottage cheese for me. Too sad! OK, now don't everybody jump on me for not making something nutritional; this is the first time I'm made HH in at least 3 months. DH sometimes asks for it, but I haven't been making it. I've been feeding them better than that.

Jeanie, I was SHOCKED that they carry feta cheese up here...and an ASSORTMENT at that...and don't carry PUMPKIN in a can! The things that people ask for...goodness gracious!
I wonder if the guys would notice if you put feta cheese in their HH...hmm...just a thought!

As for all of you piling into a car to come out to CA for a good meal...I think that would make for a great movie. Can you imagine the trouble you'd get into? Thelma, Louise and BeJean!

Well, if you are determined to see the hottest sites, don't forget the "world's largest ball of tinfoil" along route 66...also gotta see Wall Drug in South Dakota... all this for a poop eating fish? Trust me, it's better to have a nice piece of bass than this septic tank dwelling fish...

I made my eggy feta thing and it came out pretty darned good. First the picture:

Mediteranean Egg Bake
Spray a medium skillet with non-stick cooking spray and add 1 tsp EVOO...heat over medium.
Add 1/2 chopped yellow onion and 1 cup of chopped mushrooms. Add salt, pepper and garlic powder to taste. Cook 'em up until they're soft and remove from the pan to a prepared baking dish (sprayed with non-stick cooking spray...I used a little baking dish that is about 5 x 9 inches.
Place two big handfulls of washed baby spinach in the pan and cook until wilted, adding salt & pepper. Remove spinach and drain well. Chop the spinach coarsely. Top the onion/mushroom mixture with the spinach.
Add one ounce of Mediteranean Feta Crumbles to the top of the spinach. If you can't find the preseasoned feta, just use the regular stuff and season however you'd like to.
Beat one egg with two whites and two tablespoons of half 'n half. Season the eggs with salt & pepper and a pinch of garlic. Pour well beaten mixture over the top of everything and then bake at 350 for 30 minutes.
I put the ingredients into the Daily Plate and came up with:
300 calories; 14g of fat; 12g of carbs; 3g of fiber and 15g of protein

It's true...Tilapia is pretty gross and you have to be careful where it originated from (I don't eat any from Asia). Farm raised is what I prefer.

My fish was farm raised, I actually had no clue though. Considering Les was raised on deep fried fish from the Asian seafood Market I am sure we have had some pretty questionable stuff in the past.
Well, I called Les and offered up my suggestions for dinner and he pretty much nixed my ideas (BOO!!) I would have had my way, like I usually do, but I was feeling like treating my hubby and let him decide. We ended up with one of the usuals.
Usual
Sautee one small onion
4 small roma tomatoes
2 cloves garlic
add soy sauce umm about 4 TB and 2 TB of bacon (I have some frozen)
Pour over frozen tilapia and baked covered at 350 for 30 minutes.
Serve over rice or orzo or spinach :o)
I will be trying Kim's recipe for sure. That just made my tummy grumble!
Yall are welcome to my house for dinner anytime. Just bring your jammies because once you meet my boys and my puppies you won't won't to go home :o)
Oh and the parasite will not be set free anytime soon. It has some more bakin to do, Oh wait you meant set the fish back to sea....

Not a promotion for Costco, but the Tilapia loins that we have in our freezer are farm raised and CLEAN!!! When we were looking for a source I learned all about the horrors of this little fish. If you look at the tilapia that we have, it is white...not the gray color that you'll find elsewhere. You pay a bit more, but it's worth it to me!

I cant tell what color my little tilapia frozen in the freezer were...so out they went and at the local wally world they had farm raised in the US tilapia individually packaged for 6 4-oz pieces $4.99
Not bad at all...
